Low Carb Cheeseburger Casserole

Ingredients
  

  • 1 pound ground beef
  • 1 large yellow onion
  • 2 cloves garlic minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • tsp smoked paprika
  • 1 tsp worcestershire sauce
  • 2 ounces cream cheese
  • 2 large eggs
  • 2 tsp mustard
  • ½ cup heavy cream
  • 2 cups grated cheddar cheese divided
  • 1 dill pickle diced
  • 3 Tbsp bacon bits 3 slices of bacon cooked and crumbled

Instructions
 

  • Spray a 2 quart casserole dish (or 8x11" pan) with non stick cooking spray. Preheat oven to 350 degrees.
  • Brown ground beef with onion in a large skillet over medium or medium high heat. Drain off excess fat.
  • Turn heat to medium low; add garlic, salt, pepper, and smoked paprika and saute for one minute.
  • Add cream cheese and worcestershire sauce and stir till cream cheese is melted. Pour into prepared pan.
  • Whisk together eggs, mustard, cream, and half of the cheese. Pour over the meat mixture.
  • Sprinkle diced pickle over the top, followed by the last cup of shredded cheese, then the bacon bits.
  • Bake at 350° for 35-40 minutes if using a casserole dish, or for 20-25 minutes if using an 8x11" pan. Cheese will be lightly browned around the edges, and the center should be 165°, but a knife will not come out clean.
