Instructions
Bring the milk barely to a simmer in a saucepan. Remove from the heat and whisk in the cereal. Let sit for 5-10 minutes.
While the cereal sits, heat your oven to 375° and spray 12 muffin cups with cooking spray.
In a large mixing bowl, whisk together the cereal mixture, oil, egg, sugar, and vanilla.
Whisk together the flour, baking powder, and salt in a seperate bowl. Add to the wet ingredients with the chocolate chips. Stir just until combined.
Spoon the batter into the prepared muffin pan. Bake at 375° for about 18 minutes, or until the middle is set. The muffins don't turn very brown, but they are done.
Let the muffins cool in the pan for about 5 minutes, then carefully invert onto a wire rack. Serve warm or at room temperature.
Notes
Muffins are also tasty plain, with no additional mix-ins. They will be slightly smaller, so decrease the baking time to 15-16 minutes.
