How to Make Malt-O-Meal Magic Muffins
- PREP – Soften the Malt-O-Meal cereal by letting it soak in simmering milk for 5-10 minutes.

Spray muffin tins with cooking spray and preheat your oven to 375°. - WET INGREDIENTS – Whisk the cereal mixture, oil, egg, sugar, and vanilla in a large bowl.

- DRY INGREDIENTS – In another bowl, whisk the flour, baking powder, and salt.
- COMBINE – Add the dry mixture to the wet mixture and add the chocolate chips or any other mix-ins of your choice. Stir gently just until combined. (I like to make a few different flavors from one batch.)

- BAKE – Divide the batter between 12 muffin cups.

Bake at 375 degrees for about 18 minutes, or until set in the middle.
- COOL & SERVE – Let the muffins cool in the pan for about 5 minutes, then remove to a cooling rack. Serve warm, or let them cool to room temp.

Tips for the Best Magic Muffins
- What makes this recipe better than the rest is soaking the cereal in hot milk before adding it to the batter. This makes extra moist muffins!
- Don’t Overmix the Batter – Overmixing can make muffins dense instead of fluffy.
- Remove the muffins from the oven as soon as the center is set. They don’t turn very brown, but if you overbake them, they will be dry.

Instructions
- Bring the milk barely to a simmer in a saucepan. Remove from the heat and whisk in the cereal. Let sit for 5-10 minutes.
- While the cereal sits, heat your oven to 375° and spray 12 muffin cups with cooking spray.
- In a large mixing bowl, whisk together the cereal mixture, oil, egg, sugar, and vanilla.
- Whisk together the flour, baking powder, and salt in a seperate bowl. Add to the wet ingredients with the chocolate chips. Stir just until combined.
- Spoon the batter into the prepared muffin pan. Bake at 375° for about 18 minutes, or until the middle is set. The muffins don't turn very brown, but they are done.
- Let the muffins cool in the pan for about 5 minutes, then carefully invert onto a wire rack. Serve warm or at room temperature.
Notes
- Muffins are also tasty plain, with no additional mix-ins. They will be slightly smaller, so decrease the baking time to 15-16 minutes.
