Spread a 9x13 inch pan with butter, or spray with cooking spray.
Combine the sugar, salt, and corn syrup in a large pot. Cook and stir over medium heat just until the sugar is dissolved and the mixture comes to a boil.
Remove from the heat and add the peanut butter and vanilla; stir until melted. Stir in the crisp rice cereal.
Use wet hands to press the cereal mixture into the prepared pan.
Combine the chocolate chips and peanut butter in a small glass bowl. Cook at half power, stirring in 30-second intervals until smooth.
Spread the melted chocolate over the top of the bars. Chill for about an hour, or until the chocolate sets.
Cut into bars and enjoy!
Notes
If you use chunky peanut butter, you will need 1 3/4 - 2 cups, or the bars will be dry.
You can store leftover treats in an airtight container for up to a week at room temperature, longer in the refrigerator. I recommend using parchment paper or wax paper between layers.
