Chocolate Peanut Butter Rice Krispie Bars

These chocolate peanut butter rice krispie bars are the perfect no-bake treat for peanut butter lovers! A gooey and crispy peanut butter cereal bar topped with a creamy layer of chocolate. So, so good!

I am obsessed with the flavor combination of peanut butter and chocolate. I’d take one of these peanut butter treats over a traditional rice krispie treat any day!

The first recipe I tried used mini marshmallows, but the bars were a bit dry and didn’t have much of a peanut butter flavor. They were OK, but not great.

So I took inspiration from my rice crispy peanut butter balls, which have been family favorites for decades! They start with a simple syrupy peanut butter mixture, and unlike melted marshmallows, it stays soft even after it cools.

The soft peanut butter and crunchy cereal are the perfect balance of texture, and the chocolate topping takes them to a new level. I would not be surprised if they are your new favorite ” krispy treats”. They sure are mine!

How to make chocolate peanut butter rice krispie treats

  1. PREP – Grease a 9×13″ baking dish with butter, or spray with nonstick spray.
  2. PEANUT BUTTER MIXTURE – Cook and stir the sugar, salt, and corn syrup in a large pot over medium heat just until the mixture boils. Remove from the stove top and stir in the peanut butter & vanilla.
  3. COMBINE – Add the cereal and stir till thoroughly mixed. Press into the buttered pan.
  4. CHOCOLATE – Melt the chocolate and peanut butter together in the microwave at half power, stirring every 30 seconds. Spread in an even layer over the bars. chocolate topped peanut butter rice krispie treat recipe instructions
  5. COOL – Chill the bars in the fridge for about an hour, or let sit at room temperature for 3-4 hours, or until the chocolate sets.

Cut into squares with a sharp knife and enjoy! (This brownie spatula is super helpful for getting them out of the pan.)

Peanut Butter Rice Crispy Treats Variations:

  • Semi-sweet chocolate chips or dark chocolate chips can be used if you want a topping that isn’t quite as sweet.
  • For a different flavor profile, you can use half butterscotch chips or peanut butter chips in place of the milk chocolate.
  • For a more gooey treat, use just 5 cups of rice krispie cereal.
  • Recipe can be cut in half and made in an 8 or 9 inch square pan.
  • Want an even more decadent bar, sprinkle chopped Reese’s peanut butter cups on top of the chocolate before it sets.

Equipment

  • Farberware Stainless Steel 6-Quart Covered Stockpot
  •  Basics Silicone Spatula Set (2 Small, 2 Large)
  • Brownie Spatula, 1 x 2.25 x 7 inches, Stainless Steel/Wood

Ingredients
  

  • 1 cup granulated sugar
  • pinch of salt
  • 1 cup corn syrup
  • 1 ⅓ cups creamy peanut butter
  • ½ tsp vanilla extract
  • 6 cups crispy rice cereal

Topping:

  • 2 cups milk chocolate chips
  • 1 Tbsp creamy peanut butter

Instructions
 

  • Spread a 9×13 inch pan with butter, or spray with cooking spray.
  • Combine the sugar, salt, and corn syrup in a large pot. Cook and stir over medium heat just until the sugar is dissolved and the mixture comes to a boil.
  • Remove from the heat and add the peanut butter and vanilla; stir until melted. Stir in the crisp rice cereal.
  • Use wet hands to press the cereal mixture into the prepared pan.
  • Combine the chocolate chips and peanut butter in a small glass bowl. Cook at half power, stirring in 30-second intervals until smooth.
  • Spread the melted chocolate over the top of the bars. Chill for about an hour, or until the chocolate sets.
  • Cut into bars and enjoy!

Notes

  • If you use chunky peanut butter, you will need 1 3/4 – 2 cups, or the bars will be dry.
  • You can store leftover treats in an airtight container for up to a week at room temperature, longer in the refrigerator. I recommend using parchment paper or wax paper between layers.
