Slow Cooker Cheesy Bacon Dip

Ingredients
  

  • 6 slices bacon diced
  • 1 small onion diced
  • 1 teaspoon brown sugar
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 clove 1/2 teaspoon garlic, minced
  • 4 ounces cream cheese softened to room temperature
  • ½ cup sour cream
  • 1 cup shredded mozzarella cheese
  • 5 oz diced tomatoes and green chilies (half a can) I use Rotel original, drained

Instructions
 

  • Cook bacon in a skillet over medium heat till crisp. Remove to a paper towel lined plate.
  • Reserve about 1/2 a tablespoon of bacon grease. Add the onion, brown sugar, salt, and pepper to the skillet. Fry in the bacon grease till tender, about 3-5 minutes. Add the garlic and cook for 30 seconds. Remove from heat and drain any extra grease.
  • Add the cream cheese and sour cream to a slow cooker that has been sprayed with non-stick spray. Stir in all remaining ingredients.
  • Cook on HIGH for 1-2 hours, or on LOW for 2-3. Serve warm with chips, crackers, or veggies.

Notes

  • You can also place in a small baking dish, top with extra cheese and bake at 350° for 20-30 minutes.
