St. Patrick’s Day Chocolate Chip Cookies – a box of pistachio pudding mix makes these cookies perfect for St. Patrick’s Day!

Ingredients
  

  • 1 cup salted butter softened
  • ¾ cup brown sugar
  • ¼ cup sugar
  • 3.4 oz box instant pistachio pudding (just the mix)
  • 1 tsp vanilla extract
  • Green food coloring optional
  • 2 eggs
  • 2 ¼ cups all purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 cups chocolate chips or white chips I use half and half

Instructions
 

  • Cream butter, sugars, and dry pudding mix in a large bowl. Beat in vanilla and eggs (and food coloring if desired). Stir in dry ingredients and chocolate chips.
  • Scoop onto silpat lined or lightly greased cookie sheets.
  • Bake at 350° for 9-10 minutes.
