    Everyone at work loved these! The pudding made them nice and soft, and the pistachio flavor was a tasty change.

    My cookies are not green!! They taste wonderful! I used Andes Mint Chips instead – do you think that is why?

      I don’t think the Andes Mint Chips would make a difference. Different brands of pistachio pudding could have more or less green food coloring in them though. Maye that’s it. You can always add your own food coloring if you want. 🙂
