Ingredients
  

Muffins

  • 2 eggs
  • 18 Tbsp sugar 1 cup + 2 Tbsp
  • ¼ cup melted butter
  • ¼ cup canola oil
  • 1 cup buttermilk
  • 1 ½ tsp vanilla
  • 2 ½ cups all purpose flour
  • 2 ½ tsp baking powder
  • 1 tsp salt
  • 1 cup diced strawberries
  • ¾ cup semi-sweet chocolate chips

Instructions
 

  • Beat eggs and sugar in a large mixing bowl till thick and pale yellow.
  • Add butter, oil, buttermilk, and vanilla. Blend well.
  • Whisk together flour, baking powder, and salt. Stir in lightly, then gently fold in strawberries and chocolate chips.
  • Fill greased muffin tins 3/4 full. Bake at 350° for about 20 minutes. Cool in pans for 5-10 minutes, then remove to cooling racks.
  • Melt together chocolate chips and coconut oil and drizzle over muffins.
