Instructions
Beat eggs and sugar in a large mixing bowl till thick and pale yellow.
Add butter, oil, buttermilk, and vanilla. Blend well.
Whisk together flour, baking powder, and salt. Stir in lightly, then gently fold in strawberries and chocolate chips.
Fill greased
muffin tins
3/4 full. Bake at 350° for about 20 minutes. Cool in pans for 5-10 minutes, then remove to cooling racks.
Melt together chocolate chips and coconut oil and drizzle over muffins.
