Strawberry Trifle

Ingredients
  

  • 2 pounds fresh strawberries
  • ½ cup sugar
  • 2 8 oz packages cream cheese softened to room temperature
  • 1 ½ cups powdered sugar
  • 1 Tbsp frozen orange juice concentrate thawed
  • 2 ½ cups heavy cream
  • 1 loaf pound cake

Instructions
 

  • Reserve a few strawberries to garnish the top of your trifle. Slice the strawberries and toss with the 1/2 cup sugar. Set aside. 
  • Beat the cream cheese in a large bowl until smooth. Beat in the powdered sugar and orange juice concentrate, beat till smooth.
  • Whip the cream till soft peaks form, then fold it into the cream cheese mixture.
  • Cut the pound cake into 1" cubes. (I like to cut off the end pieces first.)
  • To assemble: In a trifle dish or glass bowl, layer 1/3 of the cake cubes, 1/3 of the cream mixture, 1/2 of the berries. Repeat. Then add the remaining cake cubes and top with the remaining cream. Garnish the top with strawberries.

Notes

I like to use my homemade pound cake for this recipe, but you won't need the entire cake. If you prefer, you can use a store bought pound cake.
