Instructions
Whisk together buttermilk, oil, eggs, and vanilla in a large bowl.
Combine sugar, flour, cornstarch, baking powder, soda, and salt in another bowl. Whisk into wet ingredients till barely blended.
Let batter sit for 30 minutes.
Cook in a hot waffle iron till golden brown. Serve warm.
Notes
-A soup ladle works great for scooping the batter onto the waffle iron.
