bacon
diced into 1 inch pieces

medium sized potatoes
peeled and chopped

onion
diced

zucchini squash
chopped

yellow squash
chopped

Instructions
Cook bacon in a large skillet over medium heat till very crispy. Drain off all but about 1 Tbsp grease.
Add potatoes to the pan and cook till crisp-tender, about 15-20 minutes. (You can add a little water to the pan to speed things up a bit.)
Add zucchini and squash and cook for about 5 minutes longer. (Don’t overcook the squash, you don’t want it all mushy.)
Season with salt and pepper and serve immediately.
Notes
-If you prefer, you can cook the bacon in strips and then crumble it.
