Ingredients

Pizza Crust

  • 1 ½ cups warm water (105°F to 110°)
  • 2 ¼ teaspoons instant yeast
  • ½ teaspoon sugar
  • 2 Tablespoons olive oil
  • 1 teaspoon salt
  • 3 ¼ cups flour, more or less (all purpose or bread flour)

To Make Pizzas

Instructions

Pizza Dough

  • Stir together the warm water, yeast, and sugar in a liquid measuring cup. Let sit for about 5 minutes, or until small bubbles form. Pour into a large bowl.
  • Add the oil, salt, and about 1 1/2 cups of the flour to the yeast mixture. Whisk or beat until smooth.
  • Gradually add enough flour to form a soft dough that is slightly sticky, but won't stick to your fingers.
  • Dump out onto a floured surface and knead for a couple of minutes, or until smooth.
  • Spray the bowl with cooking spray and place the dough in the bottom. Cover and let rise in a warm place for about an hour, or until doubled. Punch down.
  • Preheat your oven to 450°. Spray cookie sheets with cooking spray.
  • Divide the dough into 16 portions. (They should be about 2 ounces each.) Press each portion out into a 4 1/2-5 inch circle on a prepared cookie sheet.
  • Poke holes in the dough with a fork. Bake at 450° for about 5 minutes.
  • Remove crusts from the oven and spread each one with about a tablespoon of sauce. Add two olive slices for the eyes. Pull off pieces of the string cheese and lay them across the pizza so they look like mummy wrap.
  • Turn the oven down to 400° and bake the pizzas for 8-10 more minutes or till crust is golden brown and the cheese is melted.

Notes

  • You may need less olives, but I usually cut off the ends and just use the two slices from the middle of each olive.
  • If you want to add other toppings (like pepperoni), simply place them on top of the sauce, then place the strips of cheese and olive eyes on top.
  • After the dough has risen for an hour, you can punch it down, cover it, and store it in the refrigerator it for up to 24 hours.
  • For a crisper crust, you can just leave the oven at 450° for the second baking.
  • Leftover pizzas can be stored in an airtight container in the refrigerator for 3-4 days. We like to reheat ours in the air fryer, but you can heat them in a skillet or the oven if you prefer.
*If you only need 8 mini pizzas, you can prebake 8 of the crusts and freeze them for another day, or you can use half of the dough to make breadsticks.
