Awesome Bajio Style Crock Pot Chicken

I love the Chicken Green Chile Salad that they serve at Bajio. They have similar dishes at Cafe Rio and Costa Vida, and they are all amazing. I could eat this stuff every week and not get tired of it. The best part about it is the yummy slightly sweet chicken that they serve with it.I wanted to try it at home, so I did some online searching. All I could find were recipes for sweet pork or spicy chicken, nothing for sweet chicken. So I combined a few recipes and came up with this Bajio Style Crock Pot Chicken.
Bajio Style Crock Pot Chicken

Oh. My. Goodness. I’m not sure how close it is to the actual Bajio chicken, but it turned out so amazingly delicious! Everyone in my family loved it. I served it with tortillas, green chile rice, lettuce, cheese, and homemade Cafe Rio dressing. (I totally forgot about the black beans, but we added them the next day with the leftovers and they were a great addition.) I ate mine as a salad, everyone else assembled theirs like a taco. My seven year old son actually ate 4 tacos! We enjoyed it so much that I am considering making it again next week.

Awesome Bajio Style Crock Pot Chicken

5 chicken breasts
1/2 cup salsa
1 Tbsp cumin
1/2 cup brown sugar
1 4oz can diced green chilies
6oz Sprite (1/2 can)
Combine all ingredients in a crock pot. Cook on low for 5-6 hours. Remove chicken and shred. Return to crock pot and cook 1 more hour. Serve with flour tortillas, lettuce, cheese, black beans, and whatever other taco fixin’s your family likes.
Notes:
-This chicken is not real spicy, so you could add some extra green chilies if you like your food with a little more kick.
-It has a lot of juice, so serve it with a slotted spoon.
-Bajio serves the chicken with caramelized onions, I think I might try that next time. Maybe. I don’t know if I can handle any more yumminess.

    Hi great recipes, on the best ever choc cake it asks for choc pudding is it instant or the one you cook? Doesn’t say thanks
