Pasta of all varieties is a favorite at our house. With four boys, so is smoked sausage. So when I saw this recipe for Penne Pasta with Smoked Sausage over at Mel’s Kitchen Cafe, I thought it would be a winner. I was right. Everyone in the family loved it!
My family isn’t fond of cooked spinach, so I lowered the amount to just two cups. They were totally fine with that, and ate it right up.This recipe makes a lot, so we even had leftovers for lunch the next day. Score!



Penne Pasta with Smoked Sausage
1 tablespoon olive oil
1 medium red onion, chopped
4 cloves garlic, minced
1 14.5 oz can diced tomatoes
1 14.5 oz can crushed tomatoes
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 cup cream
1 pound penne or rigatoni pasta

About 2 cups of fresh spinach
12 ounces precooked smoked chicken sausage (it comes in a U shape)
8 ounces mozzarella cheese–half grated, half cut in 1/2″ cubes
1/4 cup grated Parmesan cheese

Cut sausage in half lengthwise, then cut in slices. Cook pasta in salted water till al dente. Add spinach right at the end so it will wilt. Drain and set aside. Cook onion in oil till tender, about 3-5 minutes. Stir in garlic and cook for another minute. Stir in tomatoes, oregano and basil; simmer for 8-10 minutes. Add cream and heat through. Season with salt and pepper to taste.
