Cherry Cheesecake Cupcakes for Valentine’s Day

Happy Martin Luther King day everyone!!!
My boys are out of school, so we are heading up to Salt Lake to spend the day with my family. Can’t wait to hang out, relax, play games, and maybe get a little shopping done. But before I go. . .

Valentine’s Day is just around the corner. I love Valentine’s Day!! I love decorating with the hearts, the pinks, the reds. Ultimate girly-ness. ๐Ÿ™‚ I also love making Valentine themed food. It is so much fun for me to come up with new ideas every year. Here is the first recipe I tweaked to make it Valentine’s Day appropriate. Oh my goodness they were good. Yummy moist cupcakes with a cherry cheesecake filling, topped with cream cheese frosting. I added a juju heart to the top of each one, but you can embellish them however you like. Or just leave them plain. Either way, they are delicious!!

Cherry Cheesecake Cupcakes

Batter:
1 cup sour cream
1/3 cup soft butter or margarine
2 eggs
1 tsp almond extract (optional)
1 1/2 cups flour
2/3 cup sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Filling:
8oz cream cheese, softened (I used light)
1/3 cup sugar
1 egg yolk
1/4 cup finely chopped maraschino cherries

Beat sour cream, butter, eggs, and almond extract. Add dry ingredients. Beat on medium speed for 1 minute. For filling, beat cream cheese and sugar till smooth, then beat in egg yolk. Fold in cherries. Line 22 muffin cups with paper liners. In each cup, layer 1 Tbsp batter, 1 Tbsp filling, 1 Tbsp batter. Bake at 350 for about 20 minutes. Cool and frost with cream cheese frosting.

Cream Cheese Frosting:
4 oz cream cheese, softened
1/2 cup butter, softened
dash of salt
1/2 tsp vanilla
1/4 tsp almond extract
3 cups powdered sugar
Red food coloring if desired
Beat cream cheese and butter till smooth. Add remaining ingredients and beat till spreading consistency, adding powdered sugar as needed.

    I can’t respond to you, so I’m replying again. I made them like that because I’d told everyone I was making strawberry cheesecake cupcakes with graham crackers on the bottom and strawberry marmalade inside and then I couldn’t find a recipe and I started panicking. But then I found your recipe, I modified it and I was still scared and panicky but they did come out great, thank God!

    I wanted to make strawberry cheesecake for Easter, so I followed your recipe, replaced the cherries with strawberry marmalade and added graham cracker type things at the bottom. This is my first time making cupcakes and it seemed like a daunting task (I’m Greek and not at all familiar with cupcakes or cheesecake) but it was so easy and fun! I only made one mistake: I let my mom bake them because I had to leave. She let them turn nice and rosy, so they deflated a bit. I still loved them and, luckily, I had leftover batter, so I’ll make more tomorrow and bake them myself. Thank you so much!.

      I bet they were delicious with strawberry marmalade and graham crackers, even if they were a bit overdone. Makes me want to try that next time!
