Halloween Recipe- Pumpkin Bat Biscuits

I know I posted a Halloween recipe yesterday, but I tried another one, and they were such a hit that I just had to share them. I slightly altered the Pumpkin Scone recipe that I posted last year to come up with these cute bats. Not only are they fun, but they are super yummy! I served them for breakfast, but I think they would also make a great after school snack. If you can’t find the cinnamon chips, you can use white chips instead. Those are also very tasty.

Pumpkin Cinnamon Chip Biscuits (AKA Bat Biscuits)

2 cups flour
1/3 cup brown sugar
1 tsp ginger
1 tsp cinnamon
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/3 cup butter
1/2 cup Hershey’s cinnamon chips
1/3 cup buttermilk
1/2 cup canned pumpkin
1 tsp vanilla
Milk
Cinnamon sugar mixture
Round black sprinkles for eyes
Combine dry ingredients in a mixing bowl. Cut in the butter till crumbly. Add the chips. Mix the buttermilk, pumpkin, and vanilla and stir in just till mixture is moistened. Pat into a circle, about 1/2- 3/4″ thick, depending on the height of your cookie cutter. Cut into bat shapes. Arrange on lightly greased cookie sheets. Brush with milk and sprinkle tops with cinnamon sugar. Add the sprinkles for eyes. Bake at 400 for about 15-18 minutes.
Notes:
-You can make these into any shape you like using the cookie cutters you have.
-To make regular round biscuits, I pat the dough an inch thick and use a glass to cut the dough into circle shapes. They will take a little longer to bake because they are thicker.
