Cinnamon Roasted Almonds

We have a new favorite snack at our house. You know those wonderful cinnamon roasted almonds they sell at basketball games, fairs, and at the mall during holiday season? They smell amazing and are so addicting, but are quite pricey. I have found a way to make them at home!

I found a few recipes online and came up with my own combination of ingredients. The results were fabulous! In fact, the first few photos I took all had hands in them because my family couldn't stay away from them long enough for me to take a picture. If you love almonds, you have got to try these!

1 egg white
1 tsp water
1 tsp vanilla
4 cups whole almonds
1/4 cup brown sugar
1/4 cup sugar
1 tsp salt
1 tsp cinnamon
Beat egg white, water, and vanilla in large glass bowl till frothy. Stir in almonds. Mix sugars, salt, and cinnamon and sprinkle over. Stir till well coated. Pour onto cookie sheet lined with parchment paper. Bake at 250 for 60-90 minutes, stirring occasionally. You want the almonds to be toasted, but don’t let them burn!

  1. I love the smell of those cinnamon almonds in the mall. Oh man, a homemade version, this could be very dangerous! I am making these first thing in the morning!

  2. Whenever I make cinnamon walnuts at home I make my sister hide them from me because I will eat the whole batch in the first few hours!
