Here is the first of several 4th of July recipes that I will be posting this week. I have so much fun cooking for holidays. There are so many yummy recipes out there that the hardest part for me is decided which ones to try.
Swedish Pancakes with Strawberries and Blueberry Sauce
1/2 cup sugar
2 Tbsp cornstarch
1/2 cup water
1/4 cup frozen orange juice concentrate
2 cups blueberries
Stir together sugar and cornstarch in a saucepan. Stir in water till smooth. Add orange juice and blueberries. Bring to a boil. Boil for 2 minutes, stirring constantly, till sauce thickens. Use as a topping for pancakes, waffles, cheesecake, or ice cream.
