Halloween Recipe #2: Frankenstein Cookies

OK, I think I might just be having a little too much fun making all these Halloween foods. ;)
My husband coached our 8 year old son's flag football team this year. We had a pizza party tonight and I made these cookies for the treats afterward. The boys loved them. They were actually pretty easy to make. If you used premade dough and canned frosting, they would be super easy. The only hard part for me was that we were out of marshmallows (oops), and I had to mix powdered sugar with marshmallow creme to make the eyes. I used a sugar cookie base, but brownies would work fabulously also. Heck, I think you could even use a graham cracker if you wanted to.

Frankenstein Halloween Cookies
1 recipe sugar cookie dough (or use purchased dough)
1 recipe for frosting (or use a can)
Cocoa
mini marshmallows

Cookie Base:
3/4 cup butter or margarine
1 cup sugar
2 eggs

2tsp vanilla
2 1/2 cups flour

1 tsp baking powder

1 tsp salt
Cream butter and sugar. Add eggs and flavorings and beat. Stir in dry ingredients. Chill for about an hour. Pat dough into the bottom of a foil lined and greased 9×13" cake pan. Bake at 350 for about 20-25 minutes. Don't overbake, or they will be hard to cut. Cool, then lift out of the pan using the foil. Cut into 12 squares.

Buttercream Frosting:
1/3 cup soft butter
2 1/2-3 cups powdered sugar (I just dumped it in the bowl)
green food coloring
about 2 tbsp milk
1/2 tsp vanilla
dash salt

Beat all ingredients till smooth and creamy, adding enough milk as needed. Spread a layer of green frosting on top of each square.

You will have frosting leftover. Add cocoa till frosting is a nice brown color. (You may need to add a little more milk.)

Place the chocolate frosting in a pastry bag (or ziplock with the corner snipped). Pipe frosting on to make hair. Cut a marshmallow in half for the eyes. Pipe on a stitched smile and dot the eyes. Repeat for remaining cookies.
