We are enjoying our first week of summer vacation, and it is already pretty hot around these parts.  My kids, especially the six year old, are requesting Otter Pops all day long. I like them to snack on something a little more nutritious, but I know they need something to help beat the heat. These frozen yogurt granola berry bites were a perfect solution.

Not only are they refreshing and tasty, they are packed with fiber and vitamins. And the protein in the yogurt helps keep my kids satisfied for more than 20 minutes. 🙂

I love using my homemade granola, but you can also use store bought. For this batch, I used vanilla yogurt with raspberries and blueberries. You can use any type of yogurt, and any kind of fruit. I think a tropical twist with pina colada yogurt and bananas would be fantastic! Have fun coming up with your favorite flavor combinations.

Granola berry frozen yogurt bites couldn’t be simpler to make. Just layer some granola, yogurt, and fruit in mini muffin cups, then freeze. You can place them in a bowl and serve them right away, or you can store them in ziplock bags (or other airtight containers) in the freezer. Then just grab a few when you are ready for a yummy and healthy snack.

Adults and kids love these simple frozen yogurt bites. A healthy and yummy summer snack!

Tip: After they are completely frozen, I like to dip the bottom of the muffin pan in hot water for a few seconds. Then just pop them out and they’re ready to eat. You can even add fresh berries on top. Yum!

Granola Berry Frozen Yogurt Bites
Yield: 1 dozen
  • 1/2 cup granola
  • 1/2 cup berries of your choice, diced (I used raspberries and blueberries)
  • 3/4 cup yogurt (I used vanilla)
  1. In a mini muffin pan, layer just over half of the granola. Divide berries evenly on top of the granola. Spoon a tablespoon of yogurt into each cup. Tap the muffin pan on the counter a few times to remove air pockets. Sprinkle remaining granola on top. Cover and freeze for at least 3 hours.
  2. Before serving, place bottom of pan in warm water for a few seconds. Use a plastic knife to pop out the yogurt bites. Serve within a few minutes, or place in ziplock bags and return to freezer.
