4th of July Breakfast-Berry Pancakes

Here is the first of several 4th of July recipes that I will be posting this week. I have so much fun cooking for holidays. There are so many yummy recipes out there that the hardest part for me is decided which ones to try. 😉

This one was a no-brainer, because my kids adore Swedish pancakes, and I had strawberries in the fridge. I posted the recipe for Swedish pancakes earlier. I just added vanilla yogurt and blueberry sauce, and it made the perfect red, white, and blue breakfast. These are so yummy though, that you don’t want to save them just for Independence day! We use this blueberry sauce on regular pancakes and waffles too, and it is just as yummy. You can use whatever kind of pancakes your family likes the best.

Swedish Pancakes with Strawberries and Blueberry Sauce

Blueberry Sauce:
1/2 cup sugar
2 Tbsp cornstarch
1/2 cup water
1/4 cup frozen orange juice concentrate
2 cups blueberries
Stir together sugar and cornstarch in a saucepan. Stir in water till smooth. Add orange juice and blueberries. Bring to a boil. Boil for 2 minutes, stirring constantly, till sauce thickens. Use as a topping for pancakes, waffles, cheesecake, or ice cream.

    I clicked on your 4th of July recipes link and got the Swedish Pancakes with Strawberries and Blueberry Sauce page but the link to the recipe for the Swedish Pancakes is no longer there. Would you be able to fix the link so I can get your Swedish Pancakes recipe to go with the Blueberry Sauce recipe I did get? Thanks so much. They look really yummy!
