If money weren’t an option, we would eat fish once or twice a week. But alas, living in Utah, fish costs an arm and a leg. And teenage boys can eat a bucketload. So it only appears on our menu every few weeks. Our ultimate favorite is Pecan Crusted Salmon. Several of my boys request it every year for their birthday dinner. It is the bomb!
Tilapia however, is a bit more affordable. I’d never tried it before, but one of my friends assured me that it is mild flavored, and that her kids love it. So I bought some on sale and then proceeded to scour the internet for a recipe to try out. I found this one at Allrecipes, but I tweaked it considerably. I made it a little lower in fat, and changed up the seasoning. Notice I didn’t say it’s low in fat. But boy oh boy is it yummy! We’ve had it twice already, and both times it was a huge hit with everyone. I have a few parmesan skeptics in my family, but they still loved this!
Broiled Parmesan Tilapia
Broiled Parmesan Tilapia
Ingredients
- 1/3 cup parmesan cheese
- 3 Tbsp butter
- 2 Tbsp mayonnaise
- 2 Tbsp lemon juice
- 1/4 tsp basil
- 1/4 tsp pepper
- 1/4 tsp seasoning salt
- 5 4.5oz tilapia fillets
Instructions
- Stir together parmesan cheese, butter, mayo, and lemon juice. Set aside.
- Season both sides of the tilapia with basil, pepper, and seasoning salt.
- Place on a foil lined cookie sheet. Broil for 2-3 minutes. Flip and broil for about 2 minutes on the second side.
- Spread the cheese mixture evenly over the fillets. Broil for 2 more minutes or till bubbly
