Mine separated too. I was very disappointed as I was making a very decadent strawberry trifle for Xmas day tomorrow and had to do some fast thinking as did not have any Amore cream to try again.
I let the chocolate cool for at least ten minutes before adding to the cream as well.
I will try again and see what happens.

It may just have been that you beat your cream a little too much before adding the chocolate. Since you have to beat it again to incorporate the chocolate, you want to make sure you don’t beat it past the soft peak stage for the first beating. Hopefully it worked out perfectly for you the second time!

I’m not exactly sure what you mean. The cream should have been whipped, so you shouldn’t have had any liquid.

    Hi Kara Cook,

Just regular vanilla extract, real or imitation – it’s up to you.

    Thanks…

Can you use Bailey’s instead of Vanilla or mix some Bailey’s in the chocolate?

I haven’t tried that, but I think it should work as long as you don’t add too much that the mousse doesn’t set up.

Hi, is this thick enough to pipe? I have a request for chocolate mousse topped cupcakes.

Yes, I piped it into the serving dishes. But it does need to be refrigerated or it starts to melt.

Yes, you can make it ahead of time and keep it chilled. It deflates a little, but it’s still tasty.

Hi! Has anyone tried this mousse with any other type of flavor? I’d like to know if someone has experimented with maybe strawberry or cherry flavor!

This was really good and really easy. I made it for Easter yesterday. I chilled both the bowl and the beaters. That makes whipping the cream much easier and quicker. My son is keto and sugar-free, so I used Choc Zero dark chocolate chips. I added a half a teaspoon of espresso powder. Was it good! Those chocolate chips are the best sugar-free ones I have found. Most of them taste sugar-free. I topped it with homemade whipped cream. Yum! The only reason I didn’t put it in dishes is because I had to take it to my sister-in-law‘s so I put it in a bowl. It was fine. My mother-in-law really liked it too! And she’s diabetic. So she could actually have dessert. thanks for the quick and easy recipe that will become a definite go to for me in the future.

You can use either heavy or whipping cream, but not half & half (light) cream.

This was certainly fast and delicious as I licked the last little bit from the bowl. I added a little bit of espresso powder and now the bowls are chilling.

hi thank you for this! I made it but the chocolate seized and it was all lumpy. It was still yum and I ate it anyway! I’m guessing the chocolate was too hot? and the cold cream made it sieze?

Can I use whipped topping instead and, if so, what would be the amount used? Also, how many ounces total does the recipe make?

I have never tried it with whipped topping, but you could. I’d guess an 8 ounce container of Cool Whip would work. It will be sweeter, so I’d stick with semi sweet chocolate chips. I didn’t weigh it, but I ended up with 6 servings that were between 1/3- 1/2 cup each.

So sorry you had trouble, that has never happened to me, but I know it’s a bummer. 🙁 I’m guessing either your chocolate was too hot, or your cream was over-beaten.

Just made this! First time was a last minute deal only to find out I had no whipped cream ???? and didn’t want to give up and attempted to make my own… New batch is chilling now and looks and tastes much better.. although I did noticed the former bowl was licked clean and it wasn’t the dog! ???? Thanks for the yummy and quick recipe!

In the past I would make Julia Child’s recipe for chocolate mousse. It was always a hit – but being 71 and getting too old to stand beating egg whites, chocolate, etc., I decided to look up easy chocolate mousse recipes. Found yours and found heaven! Very easy and very, very, very good! I used Grand Marnier instead of the vanilla to make it an official “grandma’s secret chocolate mousse recipe” and it was perfect. Next time, and there WILL be a next time, I will do the vanilla.
This recipe is a winner! Thank you SO much!
