Easy Bacon and Cheese Quiche Recipe

This classic bacon and cheese quiche recipe is baked up in a flaky butter crust, and loaded with both bacon and cheese. It’s a perfect savory dish for breakfast, brunch, or even dinner!

After one bite, everyone in my family was raving, and I bet yours will too! Who can resist a breakfast recipe when it calls for bacon?

Family Friendly Quiche Recipe

My kids are actually pretty great at eating vegetables, but they definitely don’t like them in quiche!

This quiche just calls for bacon and cheese, no spinach, broccoli, pepper, or onions that might make your kids turn up their noses.

But don’t worry, it may be simple, but the adults will love it just as well!

HOW TO MAKE BACON AND CHEESE QUICHE

  1. BLIND BAKE CRUST – Whether you use a store-bought pie crust or make your own, it’s a good idea to pre-bake the quiche crust before adding the filling. Line the crust with foil, then fill it with pie weights or dry beans. Bake in a preheated oven at 375° for 15 minutes. Carefully remove the foil and beans.

  2. FILLING – Sprinkle bacon over the hot crust, then layer with the cheese. Sprinkle with salt & pepper. Whisk together the milk and whole eggs, then pour over the top. process shots - assembling bacon quiche
  3. BAKE – Reduce the oven temperature to 350. Bake the quiche for about 40 more minutes, or until the crust is golden brown and the middle is set. A knife inserted in the middle should come out clean.

Let the quiche sit for about 5 minutes before slicing. It will come out of the oven puffed up, but it will sink a bit as it cools.

You can store leftover bacon cheddar quiche in the refrigerator for 3-4 days. Just let it cool completely, then cover it tightly with plastic wrap or transfer it to an airtight container.

Individual portions can be reheated in the microwave for about a minute.

BACON QUICHE PRO TIPS:

  • Blind baking the pie shell before adding the filling helps ensure that your quiche won’t be soggy on the bottom. I also recommend cooking it on the lowest rack of the oven.
  • If the edges of the crust start to get too brown, you can wrap aluminum foil around the edges of the pie pan.
  • Make sure your bacon is extra crispy because it will soften up as the quiche bakes.

Recipe FAQ

Should you prebake crust for quiche?

It’s not mandatory to blind bake the crust, but it does help prevent your quiche from having a soggy bottom. For this recipe, you will prebake the crust for 15 minutes.

Can I use 2% milk instead of cream in quiche?

Yes, you can definitely use milk instead of heavy cream in your favorite quiche. Whole milk or 2% milk work best; don’t try to use skim milk. Your quiche won’t be quite as rich as it is with cream, but it will still taste fantastic.

VARIATIONS:

  • You can use any of your favorite cheeses. Swiss cheese, monterey jack, mozzarella, or even parmesan cheese are all tasty.
  • If you prefer, you can use lower fat turkey bacon instead of pork bacon.
  • Add vegetables such as bell peppers, caramelized onions, mushrooms, or chopped spinach.
  • For a warm, slightly nutty flavor, add some ground nutmeg.
  • You can’t go wrong with minced garlic or garlic powder.

  • Stainless Steel Wire Whisk Set, Dishwasher Safe, 3 Piece
  • Fiesta 10-1/4-Inch Deep Dish Pie Baker, White
  • OXO Steel Pie Server

Ingredients
  

  • 1 deep dish frozen pie crust thawed (or homemade pie crust)
  • 2 oz crisp bacon bits about 2/3 cup
  • 2 oz cheddar cheese grated (about 3/4 cup)
  • 2 oz gruyère cheese grated (about 3/4 cup)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup milk I used 2%
  • 5 large eggs

Instructions
 

  • Preheat your oven to 375°. Line the pie crust with aluminum foil and fill with dry beans or pie weights. Bake the crust on the lowest oven rack for about 15 minutes.
  • Carefully remove the foil and dry beans.
  • Layer the bacon bits and grated cheese in the bottom of the pie crust. Sprinkle with salt and pepper.
  • Whisk together the milk and eggs in a medium bowl. Pour the egg mixture over the cheese.
  • Reduce the oven heat to 350 degrees. Return the pie dish to the oven and bake for another 40-45 minutes or until golden brown. A knife inserted in the middle should come out clean.
  • Let quiche sit for 5 minutes, then cut into wedges.
