Nutella Ice Cream Sandwiches

nutella-chocolate-chip-ice-cream-sandwichesMy family discovered Nutella last year, and the love affair has been going strong ever since. I’ve used it in muffins, cookies, and crepes. It was only a matter of time before it merged with one of our other loves, ice cream. Since today is National Ice Cream Sandwich Day, I thought it only fitting that I share this recipe for Nutella Ice Cream Sandwiches. Although I hesitate to call it a recipe. It’s more like an idea. A really, really yummy idea.

I was putting together some ice cream sandwiches with chocolate chip cookies, and I saw the Nutella sitting in the pantry. And this yummy treat was born. You could use any type of cookie that you like. And if you really, really love Nutella, you can spread it on both cookies. I will warn you that this is one messy ice cream sandwich. I recommend having a napkin handy. Or making your kids eat it outside. 😉

Nutella Ice Cream Sandwiches

2 chocolate chip cookies (or cookie of your choice)
1-2 Tbsp Nutella
1 scoop of ice cream (we used vanilla bean)
Spread the Nutella on the bottom of one chocolate chip cookie. Top it with a scoop of ice cream. Place the other cookie on top. Serve immediately. So simple, but oh so good!
