Rice Crispy Treats–Easterized!

I have never met a kid that doesn’t like rice crispy treats. Heck, most adults love them too. And as a bonus, they are one of the easiest treats you can make. 4 ingredients, 5 minutes, and bam, you have dessert.

I am sharing three variations with you today; you can choose the one that looks the best to you.
My four year old was helping me, and he liked the nests the best. Candy-duh. His job was pouring in the ingredients, then filling the nests with candy. He was very meticulous, making sure each nest had one egg of each color. This recipe is perfect for kids, so go grab your kidlets and stir up an Easter memory! Pretty soon they will think they are way to cool to help mom in the kitchen, so seize the moment!

Rice Crispy Nests

3 Tbsp butter or margarine
4 cups mini marshmallows
1 tsp vanilla
4 cups rice crispies

Melt butter in a large bowl in the microwave. Add marshmallows and cook till melted, stirring often. Add vanilla and cereal and stir to combine. Using wet hands, shape into nests and place on waxed paper. Let cool till set. (As the nests cool, gravity starts pulling the sides back down. Just push them back together.) Fill with jelly beans, M&M’s or other egg shaped candies.

Chocolate Drizzled Rice Crispy Eggs

Using the same recipe as above, shape the mixture into egg shapes. You can use a cookie cutter, or just shape with your hands, pressing against the counter to flatten. I used the hand/counter method. Place on waxed paper to cool. Drizzle with melted chocolate. I’ve used white and semi-sweet. Both are delicious!

Festive Rice Crispy Treats

Follow the recipe above, but stir about 1 cup of Easter M&M’s into the mixture with the cereal. Press into a buttered 9×13″ pan. Cool slightly and cut into squares. This can be used for any holiday, just change the color of the M&M’s.

Notes:
-Most recipes call for buttering your hands when working with the rice crispy mixture. Plain ole water works just as well-in fact better in my opinion. And no, it doesn’t make them soggy. So just keep a bowl of cold water on the counter and dip in it when the mixture starts to stick. (Or run your hands under the faucet, but then the faucet handle gets mighty sticky.)
