Ground beef, potatoes, beans, corn and a bit of bacon make this crockpot cowboy casserole recipe a real crowd pleaser! A topping of melted cheese makes it even more delicious.

I love finding a new crockpot recipe that my whole family can agree on, and this one fits the bill!
The first time I made it, I didn’t add the bacon or taco seasoning. My family still enjoyed it, but with the additional two ingredients, it’s simply delicious!
I like to serve it with a green salad, green beans with bacon, or another green vegetable.
If you’ve got hungry teenage boys who are a bottomless pit of hunger, this hearty cowboy casserole is going to be a lifesaver. It’s quick to prep, and satisfies even the hungriest cowboys!
How to make crockpot cowboy casserole:
- PREP – If you don’t have precooked bacon, cook and crumble your bacon first. Peel and slice your potatoes. Spray your slow cooker with cooking spray.
- BEEF – Brown the ground beef in a hot skillet, then drain off any fat.

- ASSEMBLE – Layer all of the ingredients but the cheese in a 6 quart (or larger) slow cooker. Give it a gentle stir so the potatoes are evenly coated.

- COOK – You can cook the casserole on LOW heat for 7-8 hours, or HIGH heat for 3-4 hours. Thinly sliced potatoes will cook faster.

- TOPPING – When the potatoes are tender, sprinkle cheese over the top. Replace the lid and cook for a few minutes until the cheese melts.
Serve hot.

VARIATIONS:
- Feel free to add additional veggies like bell peppers, green beans, sweet potatoes, or peas.
- Cream of mushroom soup can be used instead of chicken.
- One or both of the cans of kidney beans can be replaced with a can of black beans, pinto beans, cannellini beans, or any beans you have on hand.
- For a spicier dish, you can use chili beans, and add green chilies, hot sauce, or jalapeno peppers.
- Ground turkey or chicken can be used instead of beef.

- 1 pound lean ground beef
- 6 slices cooked bacon
- 1 onion, diced
- 2 pounds russet potatoes, peeled and sliced
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp taco seasoning
- 1 tsp chili powder
- 1 ½ tsp sea salt
- ½ tsp black pepper
- 1 ½ cups frozen corn
- 30 ounces canned red kidney beans (2 15 oz cans)
- 10.5 ounce can cream of chicken soup
- 15 ounce can diced tomatoes
- 1 ½ cups shredded cheddar cheese
Instructions
- If you don't have precooked bacon strips, cook your bacon until crispy and break it into small pieces.
- In a large skillet, brown the ground beef over high or medium heat. Drain off any excess fat.
- Peel the potatoes and slice them about 1/4 inch thick.
- Spray a 6 quart crockpot with cooking spray. Layer the cooked ground beef, sliced potatoes, diced onion, bacon, seasonings, corn, beans, condensed soup, and tomatoes. Gently stir together.
- Cook on LOW heat for 7-8 hours, or HIGH heat for 3-4 hours. When the potatoes are tender, it's done.
- Sprinkle the cheese over the top. Add the lid and cook for about 10 minutes or until the cheese melts.
Notes
- Cooking time will vary based on the thickness of the potatoes. Thinner slices will cook faster.
- Leftovers can be stored in an airtight container in the refrigerator for 4-5 days.
