Cinnamon Toast Crunch Cereal Bar Recipe

This easy Cinnamon Toast Crunch cereal bar recipe is a tasty and fun twist on traditional Rice Krispie treats. If you love cinnamon sugar, you won’t be able to resist these no bake bars!

When you need a treat in a hurry, no bake treats are always a win. I’m not a huge fan of rice crispy treats, but I couldn’t stop eating these!

The Cinnamon Toast Crunch makes them extra crunchy, and of course you can’t beat the gooey marshmallows holding them together. But it’s the cinnamon sugar flavor that makes them irresistible!

This recipe was inspired by BruCrew Life, but I changed the amount of marshmallows and added salt and vanilla. I also prefer to melt my marshmallows in the microwave instead of on the stovetop.

How to make Cinnamon Toast Crunch bars:

  1. PREP –  Line a square 8 inch pan with foil or a piece of parchment paper. Coat with butter or use non-stick cooking spray.
  2. MELT – In a large bowl (preferably glass), melt the butter in the microwave. Add the marshmallows & salt, and continue to cook, stirring every few seconds until smooth.
  3. COMBINE – To the melted marshmallow mixture, add the vanilla, then the cereal. Stir quickly until evenly coated. how to make cinnamon toast crunch cereal bars
  4. FORM – With wet or buttered hands, press the mixture gently into the bottom of the pan. Just try to get an even layer, don’t press too firmly or your bars will be hard to bite into.
  5. COOL – I like my bars gooey, so I cut them after about 10 minutes. But you can let them cool for 30-40 minutes. To cut, lift the foil and place the bars on a cutting board. Use a large sharp knife. cinnamon toast crunch bars on a cutting board

VARIATIONS:

  • If you prefer, you can melt the butter and marshmallows in a large pot over medium-low heat.
  • You can use 6 ounces of large marshmallows; just use kitchen shears to snip them into smaller pieces so they melt faster.
  • Try using your favorite cereal! I think Golden Grahams and corn Chex would be fantastic, and my kids want me to try Fruity Pebbles.
  • To take the bars to a whole new level, drizzle melted white chocolate over the top of the bars after you cut them.

Equipment

  • Pyrex Glass Mixing Bowls
  • Pyrex Basics Square Glass Baking Dish (8in x 8in x 2.5in)
  • 2 Piece Cutting Board Marble Finish

Ingredients
  

  • ¼ cup salted butter
  • 4 cups mini marshmallows (about 6 ounces)
  • 1 pinch salt
  • ½ tsp vanilla extract
  • 4 cups Cinnamon Toast Crunch cereal

Instructions
 

  • Line an 8-inch square pan with aluminum foil or parchment. Spray with nonstick cooking spray or spread with butter.
  • Melt butter in a large glass bowl. Add the marshmallows and salt. Continue cooking in the microwave, stirring every 30 second with a rubber spatula, until melted.
  • Add the vanilla, then the cereal. Stir until evenly coated.
  • Press the cereal mixture into the prepared baking pan with wet hands. Let cool for about 10 minutes.
  • Use the foil to remove from the pan. Place on a cutting board and cut into squares.

Notes

  • After the marshmallows start to melt, watch closely. The mixture can quickly burn.
  • Gently press the cereal mixture into the pan. If you press down too firmly, the bars will be dense and hard to bite into. 
  • Leftover bars can be stored at room temperature in an airtight container for 2-3 days. They start to soften after that, but are still tasty. For maximum freshness, wrap them individually in plastic wrap.
