Rocky Mountain Avalanche Bar Recipe (No Bake)

This avalanche bar recipe was an instant hit the first time I made it. White chocolate, peanut butter, marshmallows, and semi-sweet chocolate combine into the most amazing no bake bars!

What is an avalanche bar?

An avalanche bar, sometimes called avalanche bark, is a no bake treat that starts with white chocolate and peanut butter melted together. Marshmallows, chocolate chips, and crisp rice cereal are stirred in, and the mixture is pressed into a pan.

They are rich, creamy, and full of peanut butter flavor. The peanuts and cereal add a wonderful crunch, and the semi sweet chocolate chips help to balance out the sweetness.

Made famous by Rocky Mountain Chocolate Factory stores, these bake avalanche candy bars are one of the tastiest things that have ever happened to Rice Krispies!

The sweet shop closest to me doesn’t sell them anymore, so I was thrilled to find a copycat recipe at Real Mom Kitchen. Like most things, the homemade version is even better!

Trust me, they are so addicting, it’s hard to eat just one!

How to make Rocky Mountain avalanche bars:

  1. PREP – Spread butter in the bottom and up the sides of a 9×13 inch pan.
  2. MELT –  Stir peanut butter and white chocolate together in a large microwave-safe bowl. Cook in the microwave in 30 second increments at half power, stirring each time until melted.
  3. COMBINE – Add the marshmallows and stir until evenly coated. Let the mixture cool for 4-5 minutes, stirring occasionally. Add a few chocolate chips to make sure they don’t melt, then stir in the rice krispie cereal and chocolate chips. how to make avalanche bars
  4. FORM – Press the mixture into the prepared pan. Chill for 20-30 minutes, or let sit at room temperature for a couple hours.

After the bars have set, cut them into squares and enjoy!

Leftover white chocolate avalanche krispie bars can be stored for up to a week, maybe even longer.

AVALANCHE BARS RECIPE PRO TIPS:

  • Make sure you let the melted white chocolate mixture cool before you add the mini chips, or they will melt.
  • To keep the mixture from sticking to your hands when you press it in the pan, simply dip your hands in water. It works better than butter!
  • For easy clean-up, you can line the pan with foil or parchment.
  • If you want thicker bars, you can use a square pan.

Ingredients
  

  • 22 ounces white chocolate chips
  • ¾ cup crunchy peanut butter
  • 3 cups mini marshmallows
  • 4 cups crispy rice cereal
  • ¾ cup mini chocolate chips can save 2 Tbsp for top

Instructions
 

  • Spread butter in a 9×13" pan, or spray with cooking spray. For easy cleanup, you can line it with foil or parchment paper first.
  • In a large glass bowl, combine the white chocolate and peanut butter. Melt in the microwave at 50% power, stirring every 30 seconds.
  • Stir the marshmallows into the peanut butter mixture and let cool for 4-5 minutes. Stirring often will speed up the process.
  • Add the rice crispies, then the mini chocolate chips. Stir until well coated.
  • Press the cereal mixture gently into the prepared pan. If desired, sprinkle remaining chocolate chips on top and press them into the bars so they stick. (You can also press extra marshmallows on top of you want.)
  • Chill the bars for 20-30 minutes, or let them sit at room temperature for 2 hours, or until set.
  • Cut into squares and serve. The bars are quite rich, so I cut them into small pieces, but you can cut larger squares if you prefer.

Notes

  • The chocolate chips will melt if your white chocolate mixture is too warm, so make sure you let it cool. You can test it by adding a couple of chocolate chips. If they melt, let it cool awhile longer.
  • If you use creamy peanut butter, you will only need a scant 2/3 cup.
  • Store the bars in an airtight container for up to a week. I like to place wax paper between the layers.
