Italian Chicken Pasta Recipe – chicken breasts in a yummy garlic tomato sauce, served over pasta and topped with two kinds of cheese. An easy Italian dinner recipe!
 
I love serving this Italian chicken and pasta with Cheesy Focaccia Bread and a green salad, but it’s also tasty with Soft Garlic Knots.

Italian Chicken with Pasta 

During hectic weeknights, I love meals that come together quickly. And if they only dirty a few dishes- even better! This Italian Chicken Pasta fits the bill. After browning the chicken, you just add the rest of the ingredients to the pan. You gotta love that!
 
This is another favorite chicken recipe that I got from a good friend. For how simple it is to make, it is surprisingly delicious. If you have any leftovers, they are great the next day! I like to store the sauce and chicken in one container and the noodles in another. That way the noodles don’t soak up all of the sauce and get mushy.
 
A can of Italian seasoned tomatoes gives this dish great flavor. The tomatoes can be hard to find, so you can just use a regular can of diced tomatoes and add some extra seasonings. I’ve included those amounts in the recipe, but feel free to adapt them to your taste.

How to make Italian Chicken over Pasta

Ingredients:

  • olive oil
  • boneless, skinless chicken breasts
  • salt and pepper
  • onion powder
  • garlic powder
  • onion
  • garlic cloves
  • Italian seasoned diced tomatoes
  • chicken broth
  • parmesan cheese
  • mozzarella cheese
  • pasta

Sprinkle chicken with seasonings and brown in olive oil in a heavy skillet. Remove from pan. Saute onion and garlic for about 4 minutes. Add tomatoes and chicken broth and simmer for 8 minutes. Place chicken back in pan and stir to combine. Simmer for 10-15 minutes or till chicken juices run clear.

Sprinkle cheeses over the top and cover with a lid. Heat just till cheese is melted. Serve over pasta.

FAQ about Italian Chicken Pasta:

I can’t find Italian diced tomatoes. What can I substitute? You can add about 1 tsp of dried basil, 1/2 tsp dried oregano, and 1/2 tsp of dried parsley to a regular can of diced tomatoes.
 
What kind of Parmesan cheese should I use? I use fresh Parmesan cheese. But if all you have is the canned parmesan cheese, you can use that, or just omit it all together. 
 
What kind of Pasta can I serve it with? We actually like it best with spiral pasta because all the sauce gets into the nooks and crannies, but I also serve it with fettuccine noodles.

Ingredients
  

  • 2 Tbsp olive oil
  • 4 boneless skinless chicken breasts
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ⅛ tsp onion powder
  • 1 onion diced
  • 2 garlic cloves minced
  • 2 14.5oz cans Italian seasoned diced tomatoes
  • 1 cup low sodium chicken broth
  • ⅓ cup grated Parmesan cheese
  • 1 cup grated Mozzarella cheese
  • 1 pound pasta cooked in salted water

Instructions
 

  • Sprinkle chicken with seasonings and brown in olive oil over medium heat in a heavy skillet. Remove from pan, set aside.
  • Saute onion for about 4 minutes. Add garlic and saute another 2 minutes. Add diced tomatoes and broth and simmer for 8 minutes.
  • Place chicken back in pan and spoon tomatoes over the top. Simmer for 10-15 minutes or till chicken juices run clear.
  • Sprinkle cheeses over the top of each chicken piece and cover skillet with a lid. Heat just till cheese is melted.
  • Serve chicken and sauce over hot pasta.

Notes

If you can't find Italian seasoned diced tomatoes, you can add a clove of minced garlic, 1 tsp of dried basil, 1/2 tsp dried oregano, and 1/2 tsp of dried parsley to a regular can of diced tomatoes.
