These pumpkin chocolate chip cookies with spice cake mix are the perfect way to celebrate the fall season. Soft, fluffy, filled with pumpkin spice flavor, and bursting with chocolate, they are always a hit!

Celebrate pumpkin season with easy pumpkin cookies!
I love baking with pumpkin because it always makes for moist baked goods. And of course the pumpkin spice makes my house smell amazing!
I got the recipe for these five ingredient pumpkin chocolate chip cookies from a friend after she brought them to a church activity. The kids gobbled them up so fast, I was lucky to even get one!
Honestly, I was surprised when I found out they weren’t made from scratch. I’m not always a fan of cookies made with cake mixes, but these are the exception! They have a perfect soft texture, and plenty of chocolate.
I like my pumpkin cookies with plenty of fall spice, so I added some extra pumpkin pie spice. They just scream fall!
How to make pumpkin cake mix cookies
- PREP – Preheat your oven to 350 degrees. Spray cookie sheets with cooking spray or use silicone liners.
- DOUGH – Combine the box of spice cake, pumpkin pie spice, pumpkin puree, milk, and 1 1/2 cups of the chocolate chips in a large mixing bowl. Stir gently just until combined.

- BAKE – Scoop dough by tablespoons onto prepared cookie sheet. Bake at 350° in a preheated oven for about 14 minutes, or until the middle is set. Press a few chocolate chips on top of each cookie.

Transfer to a cooling rack to cool completely.
You can store the cookies for up to a week in an airtight container. They can also be frozen.
I recommend first freezing them in a single layer on a cookie sheet, then transferring them to a freezer bag. They will last for up to six months in the freezer.

Spice Cake Mix Pumpkin Cookie Variations:
- Instead of milk chocolate chips, you can use semi-sweet chocolate chips, white chocolate chips, or even cinnamon baking chips.
- If you use a yellow cake mix or white cake mix, you need to use 1 1/2 tablespoons of pumpkin pie spice instead of just a teaspoon.
- For a bit of crunch, stir in a cup of chopped pecans or walnuts.

Spice Cake Mix Pumpkin Chocolate Chip Cookies
Ingredients
- 1 13.25 oz box Spice Cake Mix
- 1 tsp pumpkin pie spice
- 1 15 oz can can of pumpkin puree
- ¼ cup milk
- 2 cups milk chocolate chips divided
Instructions
- Preheat your oven to 350°. Line cookie sheets with siicone or parchment paper, or spray with cooking spray.
- In a large bowl, combine the dry cake mix, pumpkin pie spice, pumpkin puree, milk, and chocolate chips in a large bowl. Gently stir together. (I like to reserve about 1/2 cup of the chips for the tops of the cookies.)
- Use a small cookie scoop to drop cookie dough by tablespoons onto a prepared baking sheet. Bake at 350° for 13-15 minutes, or until set in the middle.
- Immediately press a few of the extra chocolate chips into the tops of the cookies.
- Let sit on the pan for 3-4 minutes, then transfer to a wire rack to cool completely.
Notes
- I’ve also used 1 15.25 oz box of cake mix. I usually add an additional tablespoon of milk.
- These soft pumpkin cookies will last for up to a week at room temperature in an airtight container.
