I think my life is going to slow down just a bit. It has been scary crazy the last few weeks, so I sure hope so! We had our annual adoption home study today. (For those of you who don’t know, we are trying to adopt a baby girl.) It was a lot of work getting our house presentable, because I have been so busy that cleaning has kind of taken a back burner the last month or so. But I managed to pull it all together. It wasn’t perfectly spotless and organized, but it was good enough. I don’t even think our caseworker noticed that the blinds in my craft room are so dusty they look like they are growing fur. 😉

Being that it has been a little hectic at my house lately, I have been making lots of fast and easy meals. This taco salad is one of my favorites. I love serving main dish salads, so as soon as the sun started shining, I put this on our menu. We had it last night and I forgot how much I love it.

We had a little bit of leftovers, and my husband was nice enough to let me have them all to myself for lunch today. Which is good because I didn’t really want to have to fight for them. But I would have if I had needed to. Good thing he is such a gentleman. 🙂
Taco Salad

Serves: 8 servings
  • 1 head lettuce, chopped
  • 1 can kidney or black beans, rinsed and drained
  • 1 can olives, sliced
  • 2 green onions, sliced
  • 1 cup grated cheddar cheese
  • 2 tomatoes, diced
  • 1 avocado, diced (optional)
  • 1/2- 1 pound hamburger, cooked with taco seasoning
  • Tortilla chips, crushed
  • Sauce:
  • 1/2 cup sour cream (I use light or fat free)
  • 1/4 cup mayo
  • 1/2 tsp chili powder
  1. Whisk together the sauce ingredients in a small bowl. Chill.
  2. Combine all salad ingredients except chips in a large bowl. Serve immediately with chips and sauce.
