    Hi Kara. How many mini loaf pans would this make and how much should I fill each pan? I love pineapple and we’ve started getting lots of zucchini and squash from the garden. Thanks

      I would try three mini loaf pans, but it depends on the size of your pans. Fill them between 1/2-2/3 full to make sure they don’t spill over. I’d start checking them after about 25 minutes. Let me know how they turn out!

    I love how people give themselves credit for creating a recipe but this zucchini pineapple bread has been around since the 1970s. In fact your recipe is almost identical to the one that I used back then. Why not just admit it? If Deb from Smitten Kitchen can admit to cribbing off an old recipe, why can’t you?

      Thanks for stopping by Mary. Actually if I adapt a recipe from another website, I try to give credit. While you may have had a similar recipe to this one back in 1970, I didn’t. Like I explained in the post, I created this recipe by tweaking another zucchini bread that I published back in 2012. I had to make it a couple times before it turned out to my liking. So while there are thousands of quick bread recipes out there, I did have to experiment in my kitchen to make this one succeed. If that’s not creating, I’m not sure what is.
