These Peppered Meatballs are tender and juicy, and packed with flavor. Served with a light creamy dill sauce, they are a hearty dish the whole family will love!

I’m taking a much needed day off today and going shopping and to lunch with my mom. I am sooo excited! She’s my best friend, and I love spending girl time with her. My life has been so hectic it’s been weeks since we’ve seen each other, and I can’t wait, so I’m not going to be my usually chatty self today.

Let me just say that I experimented and came up with this recipe for Peppered Meatballs with Dill Sauce, and it was a huge hit at our house.
peppered-meatballs-recipe
peppered-meatballs-dill-sauceDon’t be scared off by the large amount of pepper in the meatballs. They were not to spicy at all. Promise. Even my youngest son ate them without complaint. OK, he actually gobbled them up.  Give ’em a try!

  • 1 ½ # lean hamburger
  • ¾ cup quick oats
  • 1 egg
  • ¼ cup finely diced onion
  • ¼ cup milk
  • 1 tsp salt
  • 2 tsp ground pepper
  • 1 tsp Worcestershire sauce
  • 2 Tbsp ketchup
  • 1 Tbsp dry parsley

  • 2 cups chicken broth
  • 2 cups milk
  • 2 tsp dry dill
  • ½ tsp salt
  • ½ tsp pepper

  • For Meatballs: Mix all ingredients together in a large bowl till well combined.
  • Form mixture into balls and place on a greased cookie sheet. (Line with foil first for easier clean up. (Bake at 400° for about 18 minutes, shaking occasionally.
  • For Sauce: Melt butter in a large soup pot or dutch oven over medium heat.
  • Whisk in flour, then broth and milk. Whisk and cook till bubbly. Boil for at least 1 minute, stirring constantly. (Don't skip this step or your sauce will have a floury taste. Not good.)

This is making my mouth water already. Maybe that’s because I have no idea what we are having for dinner and its almost 5:00. Maybe tomorrow. Hope you had fun shopping with mom!

I love black pepper and the more the better. These could never be too spicy for me and that dill sauce looks superb.
