    Could fresh cranberries be used? Suggestions.

      I haven’t tried it with fresh cranberries, but I think they would work. I’d chop them up and blot off the excess liquid with paper towels.

    I just made this recipe and the top turned out really nice and golden but the inside was very undercooked. I am not sure what happened. Maybe I did not squeeze the juice out of the shredded zucchini or there was too much oil. It smells great and the goey undercooked bread tastes yummy, just need to figure out where I went wrong.

      Dang, I hate it when that happens! My guess is that you probably just needed to bake it a little longer. I have discovered that ovens vary greatly! I have one that bakes super hot on the bottom, so I bake my quick breads on one of the top racks. Crazy. Next time you make it, just make sure a toothpick inserted in the middle comes out clean. That’s the only way to tell if it really is done.
