If you love the Monterey Chicken at Chili’s restaurant, you have to try this knock off recipe. It’s fast, easy, and delicious!

I feel like it’s been forever since I shared a dinner recipe. We eat pretty basic in the summer. Easy meals, and lots of BBQ’s. Not a lot to share in the main dish department. But I tried this monterey chicken a few weeks ago and the family loved it. It’s already made it’s second appearance at our table.

I found the recipe over at Mmm Cafe. It is a knock-off recipe for Chili’s Monterey Chicken. I love restaurant knock-off recipes, don’t you? Saves so much money! I’ve never actually had the Monterey Chicken at Chili’s, so I can’t attest to how authentic it is. But I can attest that it is delicious!

How to make Monterey Chicken

Ingredients:

  • boneless, skinless chicken breasts
  • bacon
  • BBQ sauce
  • Monterey jack cheese
  • roma tomatoes
  • green onions

Cook the bacon in a small skillet till crispy. Meanwhile, bake chicken in a 9×13″ pan at 350° for 20-30 minutes or till juices run clear and internal temperature is 160°. (If you pound it thin, it will bake faster.)

Smother both sides of the chicken with BBQ sauce. Bake 3-5 more minutes. Top with bacon and grated cheese and broil for 30-60 seconds or till cheese melts. Garnish with tomatoes and green onions.

Hi! This looks so good and I think my family would enjoy it….except for the bbq sauce. Is there an alternative to bbq sauce that the chicken will turn out moist and delicious? Thanks!!

You could probably try using your favorite salad dressing as a substitution. Let me know how it turns out!

You are now my favorite blog because I am OBSESSED with chicken!

You are now my husbands worst blog because he doesn’t hate chicken, but when wife is cooking we have it a ‘bit’ more often than he likes.

You are now officially cool says the webmistress of Read It In 7 Days. You are going in my bloglinks because I couldn’t stand to lose this site!:)

Glad you found me! It’s always nice to hear from someone who likes chicken as much as I do.
Do you by any chance have an addiction to cookies, muffins, or cheesecake. If so, we are definitely soul mates. 🙂
