Could I make this a day before?

Yes, you can definitely make it a day before and chill it until you are ready to serve it. I actually like to take my cheese balls out of the fridge 30-40 minutes before serving so they soften up a bit.

What kind of pimento cheese do you use? I don’t know if I have seen it in a jar before in my area.

I used the Kraft pimento cheese spread. You can usually find it at Walmart.

Pimento cheese is my favorite! I never thought to turn it into a cheese ball. This is going on our New year’s day munchies menu!
