Bacon. We have a love hat relationship the two of us. I love that it tastes so good in so many things. I hate that it is not a very healthy food. I can't give it up altogether, so I use it sparingly. I'm actually not that fond of eating plain bacon, but I love using it in recipes. When I saw these Bacon Cheese Biscuits at Two Peas and Their Pod, I had to try them.
They are delicious, especially with a bowl of Corn Chowder. They come together super fast, you don't even need to roll them out. I have made them without the green onions, and my boys prefer them that way. So you can use them if you want, but feel free to omit them. They are full of goodness just with the bacon and cheese.
If you love bacon (who doesn't?) you should really give these a try! They disappear almost instantly at my house.
2 1/4 cups flour
2 1/2 tsp baking powder
2 tsp sugar
3/4 tsp baking soda
1 tsp salt
6 Tbsp very cold or frozen butter
1 1/2 cups grated cheddar cheese
3 bacon strips, cooked till crispy and crumbled
2 green onions, sliced (optional)
1 cup buttermilk
1-2 Tbsp melted butter for tops
Combine flour, baking powder, sugar, soda, and salt. Grate in the butter. (Or you can cut it in with a pastry blender.) Stir in cheese, bacon, and green onions if desired. Add buttermilk and stir lightly till just moistened. Drop by large spoonfuls onto a greased cookie sheet. Bake at 425° for 15-17 minutes. Brush with melted butter while still hot.
