Ham Broccoli Soup — Hearty and delicious, this soup is a perfect way to use that leftover ham!

I first tried this soup years ago at a church dinner. I loved it so much that I made sure to get the recipe. It is oh so yummy!

My family doesn’t even like Swiss cheese, but they all love this broccoli soup. I can’t believe it’s taken me so long to share the recipe.

The combination of flavors and textures in this broccoli soup is just amazing. Ham, swiss, and broccoli is such a delicious combo!

I like to cook it till the broccoli is just barely tender, because I like a little crunch. I definitely recommend using fresh broccoli, frozen ends up a little mushy.

Serve it with some homemade oatmeal rolls and you have a hearty comforting meal.

bowl of ham and broccoli soup with a spoonIf you have someone in your family with a gluten intolerance, this is a perfect soup. One of the only recipes I’ve seen for creamy soup that doesn’t have flour in it.

Ingredients
  

  • 3 potatoes peeled and diced
  • 3 cups chicken broth
  • 1 tsp salt
  • 2 pounds chopped fresh broccoli
  • 1 ½ cups diced ham
  • 3 cups milk
  • 1 cup heavy cream
  • ½ tsp garlic powder
  • 2 cups shredded Swiss cheese
  • ½ tsp pepper

Instructions
 

  • In a large soup pot, cook potatoes in broth and salt for 15 minutes.
  • Add broccoli and cook till crisp tender, 5-10 more minutes.
  • Add remaining ingredients, bring to a boil. Reduce heat to low and simmer for 5-10 minutes.

Notes

If you prefer a thicker soup, you can melt together 1/4 cup butter and flour in a small saucepan, then add to the soup after cooking the broccoli. Stir often while the soup is simmering.
