Awesome Chewy Brownies – these brownies are fudgy and chewy on the inside, and crackly on top. They truly are awesome!

I know what you’re thinking. Brownies, what the heck! I have like 23 recipes for brownies, why is she giving me another one? But let me tell you a little secret. I’ve never found a recipe for plain ole brownies that I like as much as the ones you make in a box.

If you love fudgy, chewy brownies with crackly tops, this is the brownie recipe for you!I’ve got wonderful recipes for cheesecake brownies, mint brownies, peanut butter brownies, and several others. But no recipe for plain brownies that I like as much as a boxed mix. I know. Scandalous.

Here I call myself a cook and I like brownies from a box. But they’re just so darn good. I love the moist and fudgy middles. I adore the crackly tops. I’ve never been able to replicate that from scratch. Until now. So if you are a baker with a secret love of boxed brownies, this recipe is for you.

 

Try not to eat the entire pan warm and gooey out of the oven.

Awesome Chewy Brownies

Yield: 12 servings

Rockin' Awesome Chewy Brownies

Rockin' Awesome Chewy Brownies

These easy brownies are made in one pan, and they are so chewy and fudgy!

Prep Time 20 minutes
Cook Time 25 minutes
Total Time 45 minutes

Ingredients

  • 1/2 cup sugar
  • 2 Tbsp butter
  • 1 Tbsp oil
  • 2 Tbsp water
  • 1 1/2 cups semi sweet chocolate chips
  • 2 eggs
  • 1 tsp vanilla
  • 2/3 cup flour
  • 1/4 tsp soda
  • 1/2 tsp salt
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 325 degrees. Spray an 8" square pan with non stick cooking spray; set aside.
  2. Bring sugar, butter, oil, and water to a boil in a large saucepan. Remove from heat.
  3. Add chips and stir till melted. Cool slightly.
  4. Add eggs and vanilla and whisk till smooth. Stir in dry ingredients and nuts.
  5. Pour into prepared pan. Bake at 325° for about 25 minutes.

Notes

Make sure the chocolate mixture is cooled before you add the eggs or you will have chocolate covered scrambled eggs.

    Sorry, but I’m a little confused by your notes. You said you substituted 1 Tbl. oil for the butter, so do I not use the 2 Tbl. butter at all and just use the 1 Tbl. of oil?

    Do you know if it’s possible to use cocoa powder instead of chocolate chips in this recipe?

      Sorry my notes were confusing, I fixed them. You make the recipe as stated, with the 2 Tbsp butter and the 1 Tbsp oil. Nope, you can’t substitute cocoa for the chocolate chips. They give it the crackly top and awesome texture. Also, they have fat and sugar in them, so if you substituted cocoa, the brownies would be dry and bitter.
