Homemade Payday Bars Recipe with Chex

Sweet, salty, crunchy and chewy, this Payday Bars Recipe has it all! Peanut fans will have a hard time resisting this sweet treat.

With the great peanut butter flavor and crunch of the classic candy bars, this easy recipe is perfect for just about any occasion. They disappear in a flash at my house!

I’m always on board with a sweet and salty treat, so I enjoy a Payday candy bar every once in awhile. But I think this homemade version made with Chex is even better!

Peanut butter, caramel, crunchy nuts, and cereal is a dangerously delicious combination, and I have a hard time resisting these bars. I have to make sure to share them so they don’t sit around tempting me!

HOMEMADE PAYDAY BARS RECIPE (WITH CHEX)

  1. PREP – Line a 9×13″ baking dish with foil and spray with cooking spray. Combine the cereal and peanuts in a large bowl.
  2. CARAMEL PEANUT BUTTER COATING – Combine the white corn syrup, peanut butter, and sugar in a large saucepan. Bring to a boil over medium heat, boil for 45-60 seconds, no longer! Add the vanilla.

  3. COMBINE – Pour the hot mixture over the cereal and peanut mixture. Stir until well coated.
  4. FORM – Use wet hands to press the mixture into the prepared pan.
  5. CUT – Remove the bars from the pan and place on a cutting board. Use a long, sharp knife to cut them into squares.

 You can store the bars at room temperature in an airtight container for up to 5 days.

PRO TIPS & VARIATIONS:

  • Make sure all your ingredients are measured before you begin cooking the peanut butter mixture. If tiy cook it too long your bars will be hard to chew.
  • If you use chunky peanut butter, you will need an additional 1/4 – 1/3 cup.
  • You can use corn Chex instead of rice, or a combination of the two.
  • Brown sugar can be used in place of the white sugar.
  • Love chocolate? After the bars have cooled, drizzle them with melted chocolate chips.

These no bake bars are a great recipe for anyone who loves Payday candy bars. Peanut butter and caramel make them gooey, cereal and peanuts add a nice crunch. So, so good!

Equipment

  • Farberware Stainless Steel 6-Quart Covered Stockpot
  •  Basics Silicone Spatula Set (2 Small, 2 Large)
  • 2 Piece Cutting Board Marble Finish

Ingredients
  

  • 6 cups Rice Chex cereal
  • 2 cups cocktail peanuts
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 tsp vanilla extract

Instructions
 

  • Stir together the chex and peanuts in a large bowl. Line a 9×13 inch pan with foil or parchment paper. Spray with cooking spray or spread with softened butter.
  • In a large pot, bring corn syrup, peanut butter, and sugar to a boil over medium heat. Boil for 45-60 seconds. Don't boil too long, or your bars will be dry and hard to chew!
  • Remove from the heat and stir in the vanilla.
  • Pour the peanut butter mixture over the cereal. Stir until evenly coated.
  • Dump the mixture into the prepared pan and press into an even layer with wet hands.
  • Use the foil to lift the bars onto a cutting board. Use a sharp knife to cut into squares.

Notes

-If you use crunchy peanut butter, you will need 1 1/4 cups.
