Butterfinger Cookies . . . soft and chewy peanut butter cookies loaded with chunks of Butterfinger. A perfect cookie for peanut butter lovers.

If you’re a regular reader, you probably know that I am a huge peanut butter fan. I actually have toast with peanut butter for breakfast several days a week, and I am one of those people who actually likes celery with peanut butter. 😉
Of course I love baking with peanut butter, and I’m always up for trying a new recipe that involves peanut butter, especially if there is chocolate involved.

I tweaked my favorite peanut butter cookie recipe to come up with these addicting little treats. The Butterfinger adds a yummy crunch, and the chocolate gets all nice and gooey. Seriously, such a delicious cookie!

I used the Butterfinger baking bits for these cookies. They are so handy because they come pre-chopped. But you can of course crush Butterfinger candy bars if you can’t find the baking bits.
Either way, you are going to want a tall glass of milk with these cookies. They are rich and delicious, and so hard to resist!

Peanut Butter Butterfinger Cookies
Peanut Butter Butterfinger Cookies

Soft peanut butter cookies filled with Butterfinger candy bits.
Ingredients
- 1 cup butter, softened to room temperature
- 1 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 3 cups all purpose flour (14 ounces)
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 10 oz bag Butterfinger Baking Bits
Instructions
- Cream butter, peanut butter, and sugars in a large mixing bowl till smooth and creamy. Beat in the eggs and vanilla.
- Whisk together the flour, baking powder, baking soda, and salt in a small bowl. Stir into the creamed mixture till just combined.
- Gently stir in the Butterfinger baking bits.
- Roll dough into 1 inch balls and place on silpat lined or well greased cookie sheets.
- Bake at 350° for about 10 minutes. Cool on pans for 2-3 minutes, then remove to cooling racks.

I was really excited to try out this cookie recipe and it came out too dry at the end. I measured 3 cups and 14oz, so I add two tablespoons of melted butter. It came together a little better. I scoped it, flattened it, and baked it. Still came out doughy
I’m a bit confused. First you said they came out too dry, but then you said they came out doughy. Did you use regular peanut butter, or did you use natural peanut butter?
I made these tonight (02/07/2024) My flour is brand new and I didn’t sift. I followed recipe instructions very well and I used Jiff creamy pb & my cookies also did not flatten.
So sorry you had trouble. I just re-tested the recipe and the cookies flattened fine for me. I measured my flour, and I used 14 ounces. Hopefully that helps. I recommend baking a test cookie, and if it doesn’t spread, you can flatten the cookie dough balls slightly. Or you could try using 2 tablespoons less flour.
Has anyone actually made this recipe? Mine did not flatten out but stayed in ball shape and I followed recipe exactly. I didn’t roll tightly. Dough seemed a bit dry to me compared to other recipes…maybe need to use less flour??
It sounds like maybe your flour was just packed more tightly in the cup than mine. So maybe do use a little less flour next time, or sift it first. I do that if my flour hasn’t been used for a few days. I’ve also found that different peanut butter brands can be thicker, and that can make a bit of a difference as well.

How did I not know until now that you can get ready-to-use Butterfinger bits for baking? That’s genius! (And so are these cookies, for that matter. Mmmm… Butterfinger.)

I love that flavor in butterfingers. So I’m in love overload with these butterfingers combined with peanut butter cookies! So good!
