Making these for Easter, wondering if you can prep it all the night before so I can just turn on the crock pot in the am?

If you want to prep the night before, you would need to soak the sliced potatoes in water, or they will be brown the next day.

These are not scalloped potatoes these are au gratin potatoes. I need a cooking time.

Haha, they started as scalloped potatoes, but I had to add cheese to the top because I love cheese! You can call them whatever you want, they will still be just as yummy!. 🙂
Like it says in step #4, I like to cook them in my crockpot on HIGH for 4-5 hours. You can also try them at LOW FOR 8-10 hours. Or if you prefer, you can cook them in the oven, covered, for about an hour.

Do these thicken with Yukon gold or other yellow potatoes, or is starch/flour needed?

I haven’t tried it, but I think you should be fine with yellow potatoes. You may want to start with only 1 1/4 cups of cream and add more if needed.

Can I double the recipe and if I do how long would you cook it for?

I don’t think you could double the recipe and still have it fit in a 6 quart slow cooker. If you have a larger one it would probably work. You would need to cook for at least 5 hours, but you shouldn’t have to double the cooking time, just add a little to it.

Do you think I could substitute whole milk for the heavy cream?

When I’m cooking in the crock pot, I don’t like to use milk, because it always curdles for me. You can try it, but I definitely recommend the cream, or at least half and half cream.

This totally frees up oven space which is so helpful especially when cooking during the holidays. Such a family favorite!

It is nice to have a few dishes that don’t need to be cooked in the oven, that’s for sure. Glad your family loves them!
