I went to a Relief Society ladies dinner a few months ago. Instead of a typical baked potato bar, they served a mashed potato bar. I thought it was the most brilliant idea! To make it extra fun, we used sundae cups instead of regular bowls or plates. They served us regular mashed potatoes, as well as sweet potatoes, both with all the fixins. It was so yummy, every single lady at my table went back for seconds!
I finally recreated the meal for my family, and they loved it! We love having a baked potato bar for dinner, but I think we enjoyed the mashed potato version even better! It is a great meal for summertime, because you don’t have to heat up the oven. I used my garlic mashed potato recipe, but you can use your favorite recipe if you prefer.
Mashed Potato Bar
Hot Mashed Potatoes (I use Garlic Mashed Potatoes)
Toppings such as:
Cooked diced bacon (or bacon bits)
Sliced green onions
Chopped fresh basil
Serve mashed potatoes in a large serving dish with all of the extra ingredients in smaller bowls. Let everyone dish up their own serving of potatoes with the toppings they like. Enjoy!
