Where oh where has this week gone? Is it really Thursday already? It’s been one of those weeks that I call a “treadmill week”. It’s like I’ve been running really fast, but I’m not getting anywhere. Do you ever have weeks like that?
Luckily I’ve got a few recipes stashed away for weeks like this. Because not a lot of cooking is going on around here. I think we might be having sandwiches for dinner tonight. 😉
I served these Chicken Strips for New Years Eve, and I think they’d be great for Superbowl Sunday. I served them as a snack food, but they could totally pass for a main dish if you served them with a green salad. I loved these and could NOT stop eating them. 🙂 The honey mustard sauce was delicious! I like it that they are just browned in oil and then baked the rest of the way. They’re still not totally healthy, but it makes me feel better. 🙂
Sesame Chicken Strips
1/2 cup dry bread crumbs
1/4 cup sesame seeds
1/2 cup mayonnaise
1 tsp onion powder
1 tsp mustard
1/4 tsp pepper
2 chicken breasts, cut in strips
2 Tbsp oil
Combine bread crumbs and sesame seeds in a gallon size ziplock bag. In a medium size bowl, combine mayo, onion powder, mustard, and pepper. Add chicken to the mayonnaise mixture and stir till all pieces are coated. Add half of the chicken to the crumb mixture and shake to coat. Remove from bag and repeat with remaining chicken. Brown chicken in a small amount of oil, then place on a greased cookie sheet. Bake at 350 for about 8-10 minutes or until juices run clear. Serve with honey mustard sauce.

2 tsp honey (more or less)
1 tsp mustard (more or less)
Stir all ingredients together. Add honey and mustard according to your taste.
